Korean Beef Bibimbap


Ingredients:

  • 2 Zucchinis
  • 8 oz Button Mushrooms
  • 4 Scallions
  • 4 Carrots
  • 2 Thumbs Ginger Root
  • 4 Garlic Cloves
  • 1 1/2 Cups Jasmine Rice
  • 10 tsp White Wine Vinegar
  • 2 TBSP Sesame Oil
  • 4 tsp Sriracha
  • 6 TBSP Soy Sauce
  • 1 Pound Ground Beef
Directions:
  1. Prep. Wash and dry all produce. Halve zucchini lengthwise; slice into half moons. Trim and thinly slice mushrooms. Trim and thinly slice scallions, separating whites from greens. Peel carrots; use a peeler, shave lengthwise into ribbons. Peel and mince ginger. Mince garlic.
  2. Cook Rice. Bring rice and 1 1/4 cups salted water to boil in a small pot. Once boiling, cover and reduce heat to a gentle simmer. Cook until tender, 15-20 minutes.
  3. Pickle Scallions and Make Sauce. Toss scallions whites with vinegar and pinch of salt in a small bowl. Set aside to marinate. In another small bowl, stir together sesame oil, 1 1/2 TBSP sugar, up half the Siracha, and 1 1/2 TBSP soy sauce (we'll use more of the Siriacha and soy sauce later).
  4. Cook Veggies. Heat a drizzle of oil in a large pan over medium-high heat (use nonstick pan if you have it). Add carrots;  season with salt and pepper. Cook, tossing, until tender but still crisp, 3-4 minutes. Remove from pan and set aside. Add another drizzle of oil to pan and repeat with zucchini; remove from pan once cooked. Add mushrooms and another drizzle of oil to pan and cook until tender, 3-5 minutes. Season with salt and pepper. Remove from pan and set aside.
  5. Cook Beef. Heat another drizzle of oil in same pan over medium-high heat. Add garlic and ginger and cook until fragrant, about 30 seconds. Add beef, breaking up meat into pieces. Cook, tossing occasionally, until no longer pink, about 4 minutes. Increase heat to high and cook until browned and crisp, about 3 minutes. Pour in 1 1/2 TBSP soy sauce and cook, tossing, until mostly evaporated, 1-2 minutes. Season with salt and pepper.
  6. Finish and Plate. Divide rice between bowls. Arrange beef, zucchini, carrots, mushrooms, and scallions whites on top. Drizzle with sauce and remaining Sriracha (to taste). Sprinkle with scallions greens and serve. After severed, give everything a good toss in bowl to combine.

Pork Tenderloin with Mushrooms and Couscous


Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 large pork tenderloin (about 1 1/4 pounds), trimmed
  • Kosher salt and freshly ground pepper
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 1/4 cup dry white wine
  • 1 1/2 cups low-sodium chicken broth
  • 2 sprigs fresh rosemary
  • 1 tablespoon plus 1 teaspoon unsalted butter
  • 1/2 cup chopped fresh parsley
  • 1 cup Israeli couscous
Directions:
  1. Heat the olive oil in a large pot or Dutch oven medium-high heat. Season the pork with salt and pepper and cook, turning, until browned on all sides, about 7 minutes. Remove to a plate, reserving the drippings in the pot. Add the celery, onion and mushrooms to the pot. Cook, stirring occasionally, until the vegetables are lightly browned and tender, about 5 minutes. Add the wine, scraping up any browned bits, and cook until reduced, about 1 minute.
  2. Add the chicken broth to the pot and bring to a boil. Reduce the heat to medium low and add the pork and rosemary. Cover and gently simmer until a thermometer inserted into the center of the pork registers 145°, 10 to 12 minutes. Remove the pork to a cutting board and let rest 5 minutes. Discard the rosemary. Add 1 tablespoon butter to the pot and stir until melted; season with salt and pepper. Stir in the parsley.
  3. Meanwhile, bring a medium pot of salted water to a boil. Add the couscous and cook until tender, about 5 minutes. Drain and stir in the remaining 1 teaspoon butter; season with salt and pepper. Thickly slice the pork and serve with the couscous; top with the mushroom sauce.

Beef Stroganoff


Ingredients:
  • 12 ounces egg noodles
  • 2 Tablespoons salted butter
  • 2 Tablespoons olive oil
  • 1 pound sirloin steak, cur into small cubes
  • salt and ground black pepper
  • 8 ounces mushroom caps, halved
  • 2 carrots, finely chopped
  • 1/2 onion, finely chopped
  • 1/2 cup Brandy or Sherry
  • 2 1/4 cups beef stock
  • 2 Tablespoons cornstarch
  • 1/4 cup sour cream
  • 1 heaping teaspoon Dijon mustard
  • Chopped fresh parsley, for serving
Directions:
  1. For the buttered egg noodles: Bring a large pot of water to a boil. Add the egg noodles and cook according to the package instructions. Drain and set aside.
  2. For the beef stroganoff: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season the meat with salt and pepper. Add half the meat to the pan and brown it quickly. Remove the first batch and cook the rest of the meat. Remove and set aside with the first batch.
  3. Add the remaining 1 tablespoon olive oil to the skillet and cook the mushrooms, carrots and onion until lightly browned. Turn off the heat and add the brandy and 2 cups of the stock. Turn the heat back on and reduce the liquid for 2 to 3 minutes. Mix the cornstarch with the remaining 1/4 cup stock, getting out all the lumps. Pour the slurry into the skillet and cook until the sauce thickens.
  4. Turn off the heat. Stir in the sour cream, mustard and beef. Taste and adjust the seasoning with salt and pepper.
  5. To finish the noodles, melt the butter in a skillet over medium heat. Add the cooked egg noodles and toss to heat through and coat with the butter.
  6. Serve the stroganoff with the noodles, and sprinkle with the parsley.

Smothered Chicken with Mushroom Gravy


Ingredients:
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 Tablespoon olive oil
  • 3 Tablespoons butter
  • 1 shallot, minced (or 1/4 cup finely minced yellow or white onion)
  • 8 ounces white button or baby bella mushrooms, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1 clove garlic, finely minced
  • 3 Tablespoons flour
  • 1 1/2 cups low-sodium chicken or beef broth
  • 1/2 cup milk, half-and-half or cream
  • salt and pepper, to taste
Directions:
  1. Season both sides of the chicken with salt and pepper. Heat the olive oil in a 12-inch nonstick skillet over medium heat until rippling and hot. Add the chicken and cook for about 4 minutes on each side, until golden and cooked through. Don't overcook or you'll have dry chicken (if you have a thermometer, cook until 165 degrees F). Remove to plate and cover to keep warm.
  2. Add the butter to the pan and melt over medium heat. Stir in the shallot, mushrooms, salt, thyme and garlic. Cook, stirring often, until the mushrooms are tender and golden and the liquid has released and most of it has evaporated, 8-10 minutes.
  3. Sprinkle the flour over the mushroom/onion mixture and stir while the mixture cooks for 1-2 minutes. Slowly whisk in the broth, adding just a bit at a time and whisking until thick then adding a bit more (this will help the flour to absorb into liquid and not clump on the mushrooms). Once all the broth has been added and the sauce is smooth, stir in the milk, and simmer the mixture for 5-7 minutes until it is thick and bubbly. Add salt and pepper to taste. Serve immediately over the reserved chicken (this is also amazing on mashed potatoes).

Mushroom Florentine Pasta



Ingredients:

  • 8 ounces linguine pasta, uncooked
  • 3 Tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 Tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 2 garlic cloves, minced
  • 3 ounces Gruyere cheese (or Gouda), shredded
  • 2 cups fresh baby spinach leaves
Directions:
  1. Begin cooking pasta according to package instructions.
  2. Whisk together flour, chicken broth, milk, salt, and pepper. Set aside.
  3. While pasta cooks, in a large skillet heat olive oil over medium-high heat. When oil begins to ripple add sliced mushrooms, saute for 6 minutes. Add minced garlic, saute for 2 minutes until garlic just begins to brown.
  4. Whisk flour, chicken broth, milk, salt and pepper mixture into mushrooms and garlic, bring to a simmer and cook, stirring occasionally until thickened, about 3-4 minutes.
  5. Add shredded cheese, stir until cheese has melted.
  6. Mix in spinach, allow to wilt.
  7. Add drained pasta to skillet, toss to coat.

Ravioli with Marsala and Mushroom Sauce


Ingredients:
  • 1 lb Mushroom Ravioli
  • 1 1/2 Tablespoons butter
  • 8 ounces mushrooms, sliced
  • 3 ounces shallots, diced (I used an onion)
  • 1 cup Marsala wine
  • 1 teaspoon thyme
  • 2 teaspoons fresh parsley, chopped
  • 1/4 teaspoon pepper
  • 3/4 cup heavy cream
Directions:
  1. Cook the ravioli according to package directions.
  2. Melt the butter over medium heat in a skillet. Saute the mushrooms, then set aside. Add more butter to the same skillet, if needed, and turn the heat down to medium-low. Add the shallots, cover, and cook for 5 minutes.
  3. Add the Marsala wine, thyme, parsley, and pepper. Stir until the liquid is reduced to 2-3 Tablespoons. Add the cream and stir constantly until reduced by half. Stir the mushrooms into the sauce, then spoon onto the ravioli.
*I used onion instead of shallots because it was what I had. They take a little longer to saute.

Sesame and Mushroom Soba Noodles


Ingredients:
  • 4-6 ounces soba noodles
  • 1 Tablespoon toasted sesame oil
  • splash of olive oil or vegetable oil for the pan
  • 1 cup sliced mushrooms (recommended: shiitake)
  • 2 cloves of minced garlic
  • 2 cups chopped napa cabbage
  • 1/2 cup chopped scallions
  • 1 Tablespoon soy sauce
  • 1-2 teaspoons of mirin
  • splash of rice vinegar
  • splash of ponzu (optional)
  • sriracha (optional)
  • a few Tablespoons sesame seeds for garnish
Directions:
  1. Cook the soba noodles on salted boiling water for about 8-12 minutes, or until they're done but still al dente.
  2. When soba noodles are done, rinse under cold water. Drain well and transfer to a large bowl. Toss the noodles with a tablespoon of sesame oil and chill the noodles in the fridge. The sesame oil will keep them from becoming gummy.
  3. Meanwhile, in a large skillet heat the olive oil. Add mushrooms and cook, stirring occasionally until they begin to wilt down. Add garlic, cabbage, half the scallions and soy sauce and cook for another few minutes. Add the mirin and cook until everything is soft. Remove from heat and set aside to cool for a few minutes.
  4. Toss the veggies with the soba noodles, a splash of rice vinegar and the rest of the scallions.
  5. Taste and adjust seasonings with your choice(s) of ponzu, more soy sauce and/or sriracha.
  6. Serve at room temp, or chill until ready to serve. Top with sesame seeds.
  7. Store in the fridge in an airtight container for up to a few days.

Roasted Green Beans with Mushrooms, Balsamic, and Parmesan




Ingredients:
  • 8 ounces mushrooms, sliced 1/2-inch slices
  • 1 lb green beans (I used frozen French style)
  • 1 1/2 Tablespoons olive oil
  • 2 Tablespoon balsamic vinegar
  • salt & black pepper, to taste
  • 2 Tablespoons finely grated Parmesan cheese
Directions:
  1. Preheat oven to 450°F. Prepare a large cooking sheet with foil or silicon mat.
  2. Put green beans and mushrooms into a Ziploc bag or plastic bowl. Whisk together olive oil and balsamic vinegar and pour into Ziploc. Close bag, shake and squeeze bag until beans and mushrooms are lightly coated. 
  3. Arrange on the prepared large cookie sheet. Spread them out so mixture is not crowded. 
  4. Roast for 20 minutes. Season with salt and pepper, then sprinkle with finely grated Parmesan.
