Peanut Butter Protein Balls



Ingredients:

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or other nut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed (I used chia seeds)
  • 1/2 cup mini chocolate chips
  • 1 teaspoon vanilla extract
Directions:
  1. Combine all ingredients in a large bowl.
  2. Use a small scoop to  portion out ingredients and squeeze firmly to make a dense ball.
  3. You can eat immediately but I choose to cool in the refrigerator, which helps the balls keep their shape.
