Ingredients:
- 1 cup oatmeal
- 1/2 cup peanut butter (or other nut butter)
- 1/3 cup honey
- 1 cup coconut flakes
- 1/2 cup ground flaxseed (I used chia seeds)
- 1/2 cup mini chocolate chips
- 1 teaspoon vanilla extract
Directions:
- Combine all ingredients in a large bowl.
- Use a small scoop to portion out ingredients and squeeze firmly to make a dense ball.
- You can eat immediately but I choose to cool in the refrigerator, which helps the balls keep their shape.
