Sloppy Joes




Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
  • 1 1/2 pounds of ground beef
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 Tablespoons olive oil
  • 1 teaspoon dry mustard powder
  • 2 teaspoons paprika
  • 2 teaspoons granulated garlic powder
  • 2 teaspoons granulated onion powder
  • 2 Tablespoons brown sugar
  • 2 teaspoons Worchesteshire sauce
  • 2 teaspoons ketchup
  • 1 1/2 cups tomato sauce
  • 1/4 cup water
  • salt & pepper, to taste
Directions:
  1. In a large skillet with high sides, add the oil and preheat it over medium high heat until the oil is nice and hot.
  2. Add the beef and break it up as much as you can with a wooden spoon. Cook the beef until it's mostly cooked through, remove most of the drippings and add the onion, peppers and garlic, season everything with a touch of salt and pepper and cook it all together until the veggies develop some color and cook down a bit, about 5 to 7 minutes.
  3. Add the ketchup along with the brown sugar, granulated onion, granulated garlic, paprika and mustard powder, cook it all together for about a minute giving it a good stir.
  4. Add the tomato sauce, touch of water and Worchesetshire, lower the heat to low, partially cover with a lid and cook everything together for about 10 minutes.
  5. Adjust the seasoning according to taste and spoon mixture over toasted buttered buns.
  6. Enjoy

Salisbury Steak


Ingredients:
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 1/2 pounds ground beef
  • 1/2 cup dry bread crumbs
  • 1 egg
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon all-purpose flour
  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon mustard powder
Directions:
  1. In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
  2. In a large skillet over medium-high heat, brown broth sides of patties. Pour off excess fat.
  3. In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally. 
*I added a whole onion sliced thinly and 8 ounces of sliced button mushrooms during the time it simmered for 20 minutes.

Spicy Black Bean Sliders


Prep: 20 minutes
Cooking time: 6 minutes
Makes 16 sliders

Ingredients:
  • 3 green onions, trimmed, chopped
  • 2 cans (15 ounce each) black beans, drained, corsely mashed
  • 2 eggs, beaten
  • 2 ribs celery, diced
  • 2 to 3 cloves garlic, chopped
  • 1.2 red bell pepper, diced
  • 1/4 to 1/2 cup seasoned bread crumbs
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon chipotle pepper powder or chili powder
  • 2 tablespoons canola or peanut oil
  • 16 mini buns
*Optional toppings: Pepper Jack or Cheddar cheese slices, guacamole, salsa, chopped cilantro

Directions:
  1. Combine green onions, beans, egg, celery, garlic, bell pepper, bread crumbs, lemon juice, salt and chipotle powder in a bowl. Spoon out about 2 tablespoons of the mixture; form into a patty. Repeat, making 16 small patties.
  2. Heat oil in a large skillet (or 2 skillets) over medium heat. Cook patties about 3 minutes per side. Serve each on a mini-roll with optional toppings.
*I just make full patties vs. sliders and it works fine. I also typically don't use a bun, and serve with avocado, homemade honey mustard (literally just mix honey & mustard), pineapple, sweet potato fries or other sides.
