Ingredients:
- 4 Red potatoes
- 2 ounces cheddar cheese, shredded
- 1 teaspoon dry basil
- salt & pepper, to taste
Directions:
- Place potatoes in a pot of boiling water until just tender about 15 minutes.
- Place boiled potatoes on a sheet pan. Take a flat bottomed drinking glass and press down on each potato, to flatten the potato.
- Sprinkle with salt, pepper, basil and cheese.
- Place under the broiler until cheese melts.
